Baked Salmon with Mango Salsa

Makes 4 servings
INGREDIENTS
| 4 -150 g (4 - 6 oz) |
salmon fillets |
| 15 ml (1 tbsp) |
olive oil |
| 5 ml (1 tsp) |
SIFTO Sea Salt Fine Crystals |
| 2 ml (1/2 tsp) |
black pepper |
| 15 ml (1 tbsp) |
grated lemon zest |
| 250 ml (1 cup) |
mango, pitted, peeled, chopped |
| 125 ml (1/2 cup) |
diced tomato |
| 50 ml (1/4 cup) |
finely diced onion |
| 1 |
jalapeno pepper, finely diced |
| 30 ml (2 tbsp) |
lemon juice |

non-stick cooking spray |
DIRECTIONS
- Preheat oven to 200ºC (400ºF); spray baking sheet with non-stick spray.
- Brush salmon fillets with olive oil and sprinkle evenly with salt, pepper and lemon zest.
- Bake 15 to 20 minutes or until salmon flakes easily with a fork.
- In medium bowl, combine mango, tomato, onion, jalapeno and lime juice. Serve over salmon.
