Baked Salmon with Mango Salsa

Makes 4 servings

INGREDIENTS

4 -150 g (4 - 6 oz) salmon fillets
15 ml (1 tbsp) olive oil
5 ml (1 tsp) SIFTO Sea Salt Fine Crystals
2 ml (1/2 tsp) black pepper
15 ml (1 tbsp) grated lemon zest
250 ml (1 cup) mango, pitted, peeled, chopped
125 ml (1/2 cup) diced tomato
50 ml (1/4 cup) finely diced onion
1 jalapeno pepper, finely diced
30 ml (2 tbsp) lemon juice
  non-stick cooking spray

 

DIRECTIONS

  1. Preheat oven to 200ºC (400ºF); spray baking sheet with non-stick spray.
  2. Brush salmon fillets with olive oil and sprinkle evenly with salt, pepper and lemon zest.
  3. Bake 15 to 20 minutes or until salmon flakes easily with a fork.
  4. In medium bowl, combine mango, tomato, onion, jalapeno and lime juice. Serve over salmon.
