Lemon Basil Shrimp with Pasta

Makes 4 servings

INGREDIENTS

225 g (8 oz) dry spaghetti or fettuccini
450 g (1 lb) medium shrimp, peeled and deveined
250 ml (1 cup) asparagus tips
50 ml (1/4 cup) chopped basil
15 ml (1 tbsp) capers (optional)
50 ml (1/4 cup) olive oil
50 ml (1/4 cup) lemon juice
2 ml (1/2 tsp) SIFTO Sea Salt Fine Crystals

 

DIRECTIONS

  1. Bring 1 liter water to a boil. Add pasta; cook 6 minutes; do not drain.
  2. Add shrimp and asparagus to pasta water and cook 3 minutes longer; drain well.
  3. Stir in basil, capers, olive oil, lemon juice and salt and pepper into pasta mixture. Serve immediately.
