Savory Lemon Chicken

 

Makes 4 servings

INGREDIENTS

500 g (1 lb) boneless, skinless chicken breasts, cut into 2.5 cm (1 in) chunks
50 ml (1/4 cup) olive oil
2 garlic cloves, minced
5 ml (1 tsp) grated lemon zest
30 ml (2 tbsp) lemon juice
2 ml (1/2 tsp) dried basil
2 ml (1/2 tsp) SIFTO Table Salt
1 ml (1/4 tsp) fresh ground pepper
250 ml (1 cup) pineapple chunks
2 red, green or yellow peppers, cut into wedges
1 red onion, cut into wedges
  wooden skewers, soaked in water before cooking

DIRECTIONS

  1. Combine chicken breast, olive oil, garlic, lemon zest and juice, basil, salt and pepper in disposable plastic bag; toss to coat well. Marinate 2 hours or overnight in refrigerator.
  2. Thread marinated chicken chunks, pineapple, peppers and onion evenly on 4 long or 8 short skewers. Discard marinade from chicken.
  3. Cook on preheated medium-high grill, turning to cook evenly until chicken is cooked through, about 15 minutes.
