Shrimp with Tomatoes & Feta

Makes 4 servings

INGREDIENTS?

30 ml (2 tbsp) olive oil
2 garlic cloves, minced
500 ml (2 cups) cherry tomatoes, halved
450 g (1 lb) medium shrimp (about 21/25 ct.)
50 ml (1/4 cup) sliced green onion
50 ml (1/4 cup) feta cheese, crumbled
5 ml (1 tsp) SIFTO Sea Salt Fine Crystals
2 ml (1/2 tsp) black pepper

 

 

DIRECTIONS

  1. In large non-stick skillet, heat olive oil. Add garlic and sauté 1 minute, until fragrant.
  2. Stir in tomatoes and cook until soft, about 3 minutes
  3. Add shrimp and green onions; cook until shrimp are pink.
  4. Sprinkle on feta, salt and pepper; heat until cheese is softened.
